· 2 tsp vanilla
· 2 tsp cinnamon
· 4 Tbsp brown sugar
· 2 Tbsp butter
Method
1. In a large mixing bowl, whisk together the flour and the egg. Gradually add in the
milk, stirring to combine. Add the sugar, salt, butter, vanilla, and cinnamon; beat until
smooth.
2.Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the
batter onto the griddle. Tilt the pan with a circular motion so that the batter coats the
surface evenly.
3.Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a
spatula, turn and cook the other side. Serve hot.
4.Sauté mangos, orange juice, vanilla, cinnamon, brown sugar for 1 minute.
5.Add filling. Stuff this mixture into the crepe, folding it like a roll. Sprinkle powdered
sugar and drizzle blackberry pulp atop the crepes and enjoy!
