Desiree's Vegetarian* Summer Roll Appetizer
Ingredients
· Vietnamese dried rice paper
· Dried rice vermicelli (or rice sticks), soaked in boiling water then drained and cooled
· Slices of your favorite fruit mango, pineapple, etc. (lime juice is needed for apples,
pears, bananas, etc.)
· Chopped iceberg or romaine lettuce
· Roughly chopped mint and cilantro leaves
Optional ingredients : bean sprouts, fresh basil leaves, chopped nuts, seared tuna, avo-
cado, julienned cucumber or any cooked meats* of your liking
Method
1.Dip the rice paper for a few seconds in a large bowl of tepid water.
2.Place on rolling surface and put small amounts of filling on the bottom half.
3.Start from the end with the filling, roll tightly and horizontally then fold in the sides.
4.Serve with Thai Sweet Chili Sauce or Hoisin sauce diluted with a bit of water.
5.Enlist help from friends and family for a fun, gastronomic experience. Enjoy!
*Goi Cuon or Vietnamese summer rolls are not always vegetarian. You can find all the
