Pampas Indians and brought to the city by the gaucho: Friends and
relatives began to call one another “che.”
The Beginnings of Modern Manufacturing
The story of industry before World War I was one of remarkable expan-
sion but not of self-sustaining growth. In the 1890s, censuses show
that tanneries, blacksmith shops, carpentry and metalworking plants,
cigarette and match factories, burlap bag works, and shoe and shirt
manufacturing had developed to meet the needs of a wider domestic
market. Immigration obviously proved a boon in terms of labor and
entrepreneurship. Most owners of domestic industries were immigrants
and foreigners. In 1910, only 21 percent of all owners were Argentine-
born. While social conventions may not have conferred prestige upon
those natives who chose careers in industry, immigrant entrepreneur-
ship certainly redressed the imbalance.
Argentina's food processors appear to have gained overwhelming
predominance among the primary manufacturers. Flour milling, meat-
