CENTRAL THAI CUISINE
The people of central Thailand are fond of sweet/savoury flavours, and many dishes in-
clude freshwater fish, pork, coconut milk and palm sugar - common ingredients in the
central Thai plains. Because of the region's proximity to the Gulf of Thailand, central
Thai eateries, particularly those in Bangkok, also serve a wide variety of seafood. Chinese
labourers and vendors introduced a huge variety of noodle and wok-fried dishes to central
Thailand as many as 200 years ago.
