Sansei Seafood Restaurant and Sushi Bar SUSHI/ASIAN/PACIFIC
RIM Perpetual award-winner D. K. Kodama, who built Kapalua's Sansei into
one of Maui's most popular eateries, has become something of a local legend
with his exuberant brand of sushi and fusion cooking. Although some of the fla-
vors (sweet Thai chile sauce with cilantro, for example) may be too fussy for
sushi purists, there are ample choices for a full range of palates. Kids have their
own menu, where old standbys like Southern-fried chicken strips and french
fries are the most popular items. On the extensive main menu appear Sansei's
trademark, award-winning Asian rock shrimp cake; Sansei special sushi (crab,
cilantro, cucumber, and avocado with a sweet chile sauce); and miso scallops. In
the traditional selections you can choose from a wide range of selections, from
very fresh yellowtail sushi to Japanese miso eggplant. If you are out for the
evening sans kids, Kodama has added karaoke and late-night programs begin-
ning at 10pm.

CUISINE/SEAFOOD This is a happy, carefree eatery—elegance and choles-
terol be damned. Chef/restaurateur Sam Choy's crab house features great fun
and gigantic meals (a Choy trademark). Imagine dining in an all-wood sampan
(the centerpiece of the 11,000-sq.-ft. restaurant) and washing your hands in an
oversize wok in the center of the room. A 2,000-gallon live-crab tank lines the
open kitchen with an assortment of crabs in season. Clam chowder, seafood
gumbos, oysters from the oyster bar, and assorted poke are also offered at din-
ner, which, in Choy fashion, comes complete with soup, salad, and entree. Lit-
tle ones who aren't fond of seafood can opt for the burger and fries or the
spaghetti and meatballs from the kids' menu.

Chef Mavro Restaurant PROVENÇAL/HAWAIIAN REGIONAL
This is another romantic pick for an adults-only night out. Chef/owner George
Mavrothalassitis, a native of Provence, has fans all over the world who have
admired his creativity. He also has the only independently operated AAA Four
Diamond restaurant in Hawaii. Located in a conveniently accessible, non-
touristy neighborhood in McCully, you can order prix fixe or a la carte, with or
without wine pairings. And they are dazzling pairings. To his list of signature
items (filet of moi with crisp scales, sautéed mushrooms, and saffron coulis;
award-winning onaga baked in Hawaiian salt crust), he's added new favorites,
including a you-can-cut-it-with-a-fork filet of beef tenderloin crusted with red
