You Call This Mexican?
Present-day Colorado borders New Mexico, while a portion of the state once belonged to
Old Mexico, which makes it doubly strange that Colorado's Mexican food is mostly under-
whelming. However, if you stick around long enough and look hard enough, you can get
your fix.
Pueblo is the Hispanic heartland of the state, with half the city on the south side of the
Arkansas River, once the official Mexico-America border. Alamosa also has deep Mexican
roots, and some ski towns do a surprisingly good job at making a Mexican fix.
Our favorites statewide include Taqueria El Nopal in Glenwood Springs, the Minturn Sa-
loon, Calvillo's in Alamosa, Mirasol Cantina in Winter Park, Telluride's La Cocina de Luz
and Lucha Cantina in Georgetown and Breckenridge.
