With ranches on both sides of the Rockies that sprawl across spectacular high-coun-
try plateaus, this was a place of meat and potatoes, with only the exotic Rocky Moun-
tain oyster to challenge an outsider's palate. Today's mix of old and cutting-edge in-
fluences have made Colorado dining much more dynamic. Of course, there's plenty of
middle America left on the plate, but there are a lot of happy surprises too.
