service and a chic decor of embroidered velvet benches, this is an easy pick for an intim-
ate dinner. Start with a cheese plate, but from there the menu gets Western with exquisite
elk shortloin and ravioli with tomato relish and local sheep ricotta. Top it off with a flour-
less dark chocolate cake in fresh caramel sauce.
Breakfasts are gourmet and noteworthy, too.

restaurant at the Hotel Columbia is one of Telluride's most respected for fine modern din-
ing with a twist - can you resist Himalayan yak rib eye or lobster corn dogs? The food is
certainly inventive, and cheap if you come at happy hour (5pm to 6pm), when sushi and
cosmos are half-price.
