Dated, formerly grand, but still a plush resort, the cylindrical flagstone and stucco Millen-
nium has a large footprint that sprawls nearly to the edge of Boulder Creek. This place has
been alive since the 1950s, and it still has the most rooms in town, along with enough zip
to make you feel just a little bit like Don Draper.
Rooms are fairly large, if garishly decorated, and those in the main building have wide
verandas overlooking the Flatirons; the garden includes two pools and 15 tennis courts.
Eating
Long a haven for vegetarians, Boulder's food scene is evolving. Farm to table is today's
buzz phrase, and local food graces the twice-weekly farmers market and stylish restaur-
ants. There's still a nod to health - eateries cater to everything from gluten-free to paleo
diets. But beyond that, there is a marked upswing in quality, with sophistication to rival
the big cities. No wonder Bon Appetit magazine rated Boulder the foodiest town in Amer-
ica.

worth leaving the downtown bubble for this true treat of a breakfast spot in a nondescript
shopping plaza. Think polenta with poached eggs, spinach and romesco sauce, impeccable
Benedicts, smoothies and ricotta lemon pancakes with blueberry sauce. The combinations
are original and very well done. Sweet servers pour bottomless cups of organic coffee at
tables with bright orange booths.

enterprise hits the sweet spot with excellent, slightly smoky baba ganoush, fresh tabouleh
and shawarma wraps made with fresh bread and plenty of greens. Cold tea comes with
fresh mint and chunks of summer fruit. The food is clean-tasting and light and the chef
personally greets most customers. The setting is a brick cafe with shady patio seating.
