Peru's iconic dish, ceviche (raw fish marinated in citrus juices and chili pepper, served
with onions, corn and sweet potato), was a major player in the country's gastronomic
renaissance and there's no better stretch of sand for a seafood crusade than Peru's North
Coast.

It would be odd to come all the way to Peru for a beach vacation, but once you're here,
