Korean restaurants are pretty ubiquitous in BSB, and Kimchi, in Regent Sq west of the
centre, is the best of the bunch. The titular kimchi (fermented cabbage) is delightfully
smelly and spicy, rice cakes are drowned in a hot, rich sauce and the chicken wings...well,
when are chicken wings a bad idea? The bulgogi (barbeque) is a lovely indulgence. Take a
taxi or bus here (Central Line or the Northern Lines 1 and 2).

night) Along the riverbank facing Kampung Ayer, this grouping of food stalls features
satay (B$1 for four chicken or three lamb skewers), dozens of kinds of mee goreng and
nasi goreng , and soups such as soto (noodle soup). The hours we give are not set in stone,
and sometimes, some stalls are open 24 hours.

Red Canopy $

the airport, the Red Canopy serves up a tasty combination of Malay, Thai, Chinese and
Western cuisine (not all at once, obviously). A Malay lunch buffet keeps customers satis-
fied by day; at night daily specials rotate in and out, from buttermilk chicken on Tuesdays
to quail egg soup on Thursdays.
INTERNATIONAL
AMBUYAT - GUMMY, GLUEY & GLUTINOUS
Remember that kid in kindergarten who used to eat paste? Well, ambuyat , Brunei's unofficial national dish,
comes pretty darn close. It's a gelatinous porridge-like goo made from the ground pith of the sago tree, which is
ground to a powder and mixed with water, and eaten with a variety of flavourful sauces.
To eat ambuyat , you'll be given a special pair of chopsticks that's attached at the top (don't snap them in two!)
to make it easier to twirl up the tenacious mucous. Once you've scooped up a bite-sized quantity, dunk it into the
sauce. After your ambuyat is sufficiently drenched, place the glob of dripping, quivering, translucent mucilage in
your mouth and swallow - don't chew, just let it glide down your throat.
