of Madison, where all the cheese is organic and made from all-chemical-free
raw milk, and where all power comes from the sun, wind, and cow.
• Bike the
Sugar River State Trail
from New Glarus. Mile for mile, there are more
moo cows here than anywhere in the state. The glacier-fed minerals in these
soils are credited with producing the richest milk anywhere.
• Northeast of Sheboygan in tiny Kiel is
Henning's Wisconsin Cheese,
notable
for being possibly the last U.S. cheesemaker to create those ginormous (up to
12,000 pounds!) “wheels” of cheese!
