Combining both simple rural fare with sophisticated sweets, Veronese cuisine is much in-
fluenced by its proximity to Venice. Risotto, polenta and potato gnocchi provide the
staples, accompanied by braised horse, pork, beef, donkey, duck and freshwater fish from
the Tincio river. Cabbages from Castagnaro, bitter red radicchio, apples and Soave cher-
ries are seasonal treats. Those with a sweet tooth will enjoy pandoro (the Veronese yeast
bread equivalent of panettone ).
