If you're looking for a real local experience, book a table at this travellers
inn on the road to Tenno. It's been run by the same family for the last 80 years and pre-
pares the typical Trentino dish,

. Although ostensibly salted beef, the dish re-
quires a laborious preparation: the meat must be tenderised in herb-infused brine in a
ceramic dish for several days and is then served with various pickled side dishes. It's been
around since the Middle Ages.
