L'APÉRO
L'apéro (short for l'apéritif , an alcohol drink taken before dinner) is a national pastime in France, particularly in
Provence-Côte d'Azur where chilled rosé wine and croutons topped with tapenade (olive spread) were seemingly
made to be consumed together. Other apéro favourites include pastis (an aniseed-flavoured alcohol), marinated
olives and socca (a pancake made with chickpea flour and olive oil, a Nice speciality).
L'apéro is common practice amongst friends but many convivial chambres d'hôte that serve dinner uphold the
tradition with their guests.
