terrace (come for lunch or arrive before dark). The chef's disciplined technique and easy
personal charm shine through in refined, unfussy creations, which play off the seasons and
showcase regional ingredients. To wit, a winter guinea fowl from up the road, fricasseed
with local morels, served bubbling hot in a tiny cocotte, topped with truffles shaved
tableside. Impeccable. Our only regret is you can't stay the night. NB: the drive is winding
- 10 minutes from Apt, 15 from Saignon.
