1 FRESH MARKETS
The best-stocked fresh market is Khlong Toey Market ( Click here ). It is a whole-
sale market that supplies most of the city's restaurants, including my own. I often
talk with the vendors to get the know-how of ingredients. Pak Khlong Market (
Click here ) is great for its quality of products, always fresh and tempting me to
buy.
2 FINE DINING
nahm ( Click here ) is part of the new wave of upscale Thai restaurants -
Western chefs resuscitating old-fashioned Thai dishes with high-end ingredients.
Foreigners love it and Thais are hospitably intrigued. Bo.lan ( Click here ) is an-
other facet of the fine-dining scene: it is based on slow-food philosophy, promot-
ing food biodiversity, cooking everything from scratch and safeguarding culinary
heritage.
3 GŎO-AY ÐĚE-O (NOODLES)
Bangkok is the place for noodles. There are hundreds of places in Bangkok and
everyone has their own recommendations. I like to go to Rung Ruang (Soi 26,
Th Sukhumvit) , which does noodle soups with pork and fish balls. There's also a
little no-name shop (cnr Th Rama IV & Th Chua Pleang) under the expressway
that does pork noodles. Sia (Th Rama IV; 7pm-midnight Mon-Sat) , opposite
the BMW showroom, is a little duck-noodle shop that has flavourful broth and
