season. Because of this, it can be a difficult plant for a backyard
garden. If you really like eating celery, give it a try. It may need
more of your attention, but it will be worth it in the end.
When preparing the celery bed, dig in at least twelve inches of
compost or aged manure. To do this, dig a trench about a foot deep
and fill it with your compost or manure. This gives you a nice deep
bed in which to plant your celery transplants.
To get the stalks to remain light green like you see in the super-
market they will need to be blanched. If celery is not blanched the
outer stalks can get brown spots and may become tough. This will
give the stalks a milder flavor as well. About three to four weeks
before you plan to harvest, tie the tops of the stalks together and
mound soil around the plants to prevent the light from reaching
them. You can also place a large coffee can with both ends removed
around the whole plant.
