Portugal produces more than half the world's supply of cork (with Spain making
much of the rest). These days, many wine stoppers are made from plastic, which
could become a threat to cork production. So far the business remains strong, thanks
to cork's insulating and acoustical applications, but some fear that if cork eventually
loses its economic value, the survival of the forests—and the special ecosystem they
support—will be at risk.
Restaurante O Fialho is a famous place where white-coated waiters feed Alentejo
cuisine to Bogart-like locals. With €30 meals, it's expensive but enjoyably pretentious,
offering arguably the best food in town (Tue-Sun 12:30-24:00, closed Mon, arrive before
20:00 or make a reservation, air-con, Travessa das Mascarenhas 16; from main square go
right alongside church—Rua João de Deus—for a 5-minute walk, take first left after pub-
lic square with theater; tel. 266-703-079). Enjoy photos of VIP diners on the wall, and ask
Gabriel for a look at the photo book showing O Fialho's great moments since it opened
in 1945. For decades, this was virtually the only fine restaurant in town. Go all-local with
