Raisers with chillier facilities will want to take care to either choose appropriate
breeds or keep the birds in a reduced production state during cold times. I find it easiest
to avoid forcing my birds to lay during periods of extreme cold by using only natural
light and feeding a low-calcium feed that keeps comb and wattle growth to a minimum.
Although I've included this chapter for readers to gain a basic understanding of
poultry biology, it's my hope that a beginner not become frustrated with all of the tech-
nical terms and complex functions described. Focus, instead, on the essential knowledge
that you need to maintain a healthy and happy flock.
