10. During these seven days, most of the solids in the milk (fat, proteins, carbohydrates) will float
to the top of the container, resulting in a “cheese.” That can ultimately be discarded and com-

tion — what we ultimately want.

• Removethesolidswithaslottedspoonanddiscard.Ifnecessaryyoucanremoveanyremain-
ing solids by filtering through a strainer or cheesecloth. The remaining yellowish-colored li-
quid is a Lactobacillus serum.
