courtyard dining room awaits inside. The specialty is
tacu tacu,
seen here in nine variet-
ies. The
lomo saltado
is conversation -stopping good, especially when doused in the house
hot pepper sauce.

classic Chachapoyas grill house. Try the
cuadril
(tri-tip), a succulent beef cut, and inter-

Getting There & Away
Although Chachapoyas has an airport, at the time of writing no carriers flew in or out of
it. Most travelers arrive via organized tours from Chiclayo, or on one of the long-haul bus
