Categories of Cheese
Cheese can be categorized in various ways depending upon
the substances from which it is made, its appearance or
consistency, whether it is aged or eaten fresh, and the
procedures used to produce it. For our purposes, we will use
fresh and aged cheeses as categories, as well as soft and hard
cheeses, since these categories have the greatest
differentiation.
