Making Your Vinegar
The first thing to do is pre-dilute your wine or beer if needed.
At levels higher than 7% alcohol it might inhibit the AAB.
You can always make it less concentrated, down to 3%, for
purely culinary use or if your beer only has that much alcohol,
and it isn't unusual for sherry vinegars to be as high as 7%. In
