Use a doubled piece of high-quality fine cheesecloth to cover
your vinegar urn. Otherwise, fruit flies will get into your
vinegar.
The size of the needed rubber bands will be different
depending upon the size of the mouth of your vinegar crock.
The only caution worth mentioning is that light and vinegar
fumes will degrade the rubber, so check the rubber bands
weekly and replace them if you see signs of deterioration.
Otherwise you'll look at your crock one day and find more
flies in it than vinegar.
Miscellaneous Supplies
A vinegar raft is a small thin piece of oak that floats on top of
your vinegar. Its purpose is to keep the vinegar mother from
sinking because if the vinegar mother sinks, it will stop
making vinegar. These are available in vinegar kits or
individually from many Internet sites. Just type “vinegar raft”
into a search engine.
