If you have a particular type or style of wine that you like and
that requires substantial aging, setting up a solera of three
containers can be an easy way of having your cake and eating
it too, where over time you can consistently produce
well-aged wine in small quantity every year.
Of course, this exact same approach is used with the higher
quality balsamic vinegars, many of which have average ages
exceeding a decade. Because vinegar is consumed in smaller
quantities than wine, it is entirely practical to set up an
inexpensive vinegar solera using five one-gallon containers. If
you drew off and replenished a half gallon annually, the aging
would converge upon nine years.
