For example, if you are making cyser from juiced apples and
the measured S.G. of your must is 1.040 but you want a
starting S.G. of 1.090, you first determine how much sugar is
needed:
(1.090—1.040) × 360 = 18 ounces
Because you will be using honey instead of sugar, you'll
multiply that by 1.3 to compensate for the moisture content of
the honey: 18 x 1.3 = 23.4 ounces.
Sometimes, you might want to start with a high-quality
bottled juice to make wine. You can tell how much sugar is in
the juice just by reading the label, and it usually amounts to
anywhere from 30g to 50g per 8 fl. oz. serving. Your first task
in that case is to do unit conversion. Let me illustrate with an
example.
I might have some 100% black cherry juice that I would like
to turn into wine. It has 50g of sugar per eight-ounce glass.
How many ounces of sugar does it have per gallon? A gallon
is 128 ounces, so there are 16 eight-ounce glasses per gallon.
So the total amount of sugar in a gallon of the juice is the
amount in 16 eight-ounce glasses, or 16 x 50g = 800g. You
convert grams to ounces by dividing by 28.35, so 800 g /
28.35 grams per ounce = 28.2 ounces of sugar per gallon.
