opening his Cornish kitchen on Marazion's main street. Diners now travel from far and
wide to taste his exciting and imaginative cooking, which majors on Cornish flavours with
a French influence: local pigeon, pork, turbot, and John Dory, laced with port reductions,
confit shallots and rich bisque sauces. Often he just dreams up the menu on the day, and
tailors the menu around customers' requested dishes - and you can't get more personal

ECO-ESCAPES

01736-810660; www.plan-itearth.org.uk ; Chyena, Sancreed; from £978 per week in summer; ) are
perfect for a green getaway. Owners Rachel and David have built two amazing roundhouses: a 'hobbit house'
made from cord wood and cob, and a 'straw bale' house made from cob, straw and earth plaster. They're defin-
itely not roughing it though, both come with composting loos and star-view roofs, and are furnished with sheep-
skin rugs, lanterns and woodburners. Eco-adventure holidays and wild camping are also offered. Green and glori-
ous.
