Lipids can provide significant health benefits, particularly the N-3-rich
fatty acids found in marine products. These fatty acids help prevent cor-
onary heart disease, reduce chronic inflammation, and may help prevent
Alzheimer's disease.
Antioxidants represent a very broad class of functional ingredients. They
include the antioxidant vitamins (vitamins A, C, and E) as well as complex
families of polyphenolic and flavonoid compounds found primarily in plant-
based foods. These antioxidants have a broad spectrum of benefits, including
prevention of oxidation of lipids in the food as well as in vivo, scavenging
free radicals in vivo, and acting as inhibitors of chronic inflammation.
The inhibition of chronic inflammation occurs in many ways; one of the
most significant is the signaling of various genes. The phenolic compounds
can either up- or downregulate genes in the inflammatory pathway. This
regulation of gene expression opens the door to understanding individual
variation and will eventually lead to personalized nutrition.
