Still others utilize their professors to lead off-site educational and cultural tours. The
University of Vermont (UVM), for instance, books more than a dozen tours per year. A re-
cent example is the “Fair Trade Coffee Tour,” which took participants to a coffee cooperative
in Veracruz, Mexico. Led by two UVM instructors, participants worked on a coffee farm,
witnessed how fair trade impacts local communities, and examined sustainable agriculture.

There's a good chance your alma mater offers a summer adult institute, but if not, here
are five of the best:
Colby College. Every August for more than 50 years, Colby College in Waterville, Maine,
has been hosting the Great Books Summer Institute, an in-depth discussion and workshop
on six selected classic books. Although courses change every year, recent examples are Tho-
mas Mann's The Magic Mountain, Fritjof Capra's The Tao of Physics, or Cervantes's Don
Quixote. It's a great bargain—only $480—for tuition, lodging, all meals (including a Maine
clambake), and the six books, which will be sent to you four months in advance.

Cornell's Adult University. Perhaps the most ambitious, Cornell University offers four one-
week sessions each July in a wide variety of disciplines. You can study such diverse topics as
“Life on a Thread: An Introduction to Spider Biology,” “The Rise, Decline, and Resurgence
of Islamic Culture,” and “Understanding the Science of Everyday Things.” There are also
workshops in landscape design, writing, golf, and tennis. For between $1,355 and $1,535,
you get tuition, lodging, 16 meals, and use of Cornell's facilities.
