Taze portakal suyu (fresh orange juice) and
other juices are popular and cheap; delicious
nar suyu (pomegranate juice) can be ordered in
season.
Refreshing ayran (yoghurt whipped with wa-
ter and salt) is the traditional accompaniment
for kebaps.
Hot milky sahlep, made from wild orchid
bulbs and reputedly an aphrodisiac, takes off the
winter chill. The first gulp of şalgam suyu is a
revolting salty shock, but persevere and you
may grow fond of this turnip concoction.
