favourite for its hearty plates of gözleme (savory pancakes) and sosyete böregi (stuffed

Ihlara Valley (admission " 8, parking " 2; 8am-6.30pm) , 60km southwest of Göreme, was a favourite retreat
of Byzantine monks, who cut churches into the base of its towering cliffs. Following the river, as it snakes between
painted churches, jagged cliffs, piles of boulders and a sea of greenery, is an unforgettable experience.
