Cava
Welcome to cava country. That's sparkling wine to the uninitiated, or wine with significant
levels of carbon dioxide either added after fermentation or produced during a second pro-
cess of fermentation. Catalonia produces 95% of Spain's cava and the grapes are grown al-
most exclusively in the grape-rich Penedès region, most notably in the village of Sant
Sadurni d'Anoia. Cava goes brilliantly with tapas. A couple of lively eat-drink cava spots
