transplanted from Orvieto and its Umbrian origins resonate in Lucio Sforza's delicious,
exceptional cooking. It's unfussy yet innovative, with dishes featuring lots of flavourful
contrasts, such as slow-roasted rabbit in a rich berry sauce and desserts that linger long
after that last crumb. For such excellent food, this intimate, informal yet classy place is
one of Rome's best deals, especially for the set lunch.

says 'Birra Peroni', and inside the lovely old-fashioned feel indicates that not much has
changed here for years, with black-and-white photographs on the walls, white tablecloths
and tiled floors. Come here when you're in the mood for grilled scamorza (a type of Itali-
an cheese, similar to mozzarella), as this is the main focus of the menu, with myriad vari-
ations: served with tomato and rocket, tomato and gorgonzola, cheese and artichokes,
grilled meats, hamburgers and so on.

busy restaurant was favoured by the infamous Ragazzi di Panisperna (named after the
street), the group of young physicists, including Enrico Fermi, who made discoveries in
the field of nuclear physics that led to the construction of the first atomic bomb. The
waiters are brusque, the place crackles with energy and the interior is covered in graffiti -
tradition dictates that diners should leave their mark in a message on the wall. The speci-
ality is the eponymous carbonara.
