Roll the meat over and wrap securely.
Use the freezer tape to secure the paper and label the package with the cut and date. Ta-da! Your
finished package is ready for the freezer.
If you minimize the air contact to your meat, and use paper or bags specifically designed for long-
term freezer storage, most meats will hold their flavor for a full year. Beyond that it isn't an issue of
safety, but rather of flavor, in using the meat. The wrapping job makes a big difference, so be sure
you remove as much air as possible.
Preserving food through freezing and canning can help you save money. Putting your food away
while there is a bounty keeps you well fed and happy during the lean times.
Freezing premade meals is another way to freeze meats and vegetables. When cooking the bounty
of the backyard farm, try cooking larger portions or doubling the meals you make. For example,
when I make the following Inside-Out Lasagna recipe, I make three or four pans instead of one
pan. One pan is eaten that night, and the other pans are stored in the freezer for quick-fix meals.
