When you harvest this much, or more, every day, you need a way to preserve it. Canning is still one of the
best ways to preserve extra food.
Equipment Needed for Home Canning
It's important to have the proper equipment on hand when you are canning your meat and pro-
duce. Canning is very safe, but only when done properly. The exact equipment needed depends on
the type of canning you plan to do: water-bath canning or pressure canning. I like to have equipment
on hand for both canning techniques. (I discuss the steps involved in both methods later in this
chapter.)
deFinitiOn
Water-bath canning is accomplished by immersing the cans in boiling water. The least-expensive method
of canning, it is only useful for high-acid foods such as fruits and pickles. Pressure canning uses a pressure
canner to increase the temperature during canning and is used for low-acid foods like most vegetables
and meat.
Before you begin canning you should have all your equipment at hand so you don't have to stop
halfway through the process. You can reuse your mason jars and rings, but should inspect your
mason jars carefully for any sign of chips or cracks that could cause problems sealing. You'll need
fresh lids each time, but they are a minimal investment once you have the jars and rings.
