Basil Pesto
Preserve the fleeting taste of summer while you can so you can enjoy it the rest of the year.

2 cups

1 4 cup
4 cups fresh basil leaves
1 cup olive oil
3 cloves garlic, minced or grated
1 4 cup Parmesan cheese, grated

1. Use a blender or food processor to blend basil and olive oil. Scrape everything off the
sides of the bowl and back into the middle.
2. Add garlic, Parmesan cheese, and salt to taste and blend into a pastelike consistency.

Pesto freezes really well. Try freezing it in ice cube trays for quick access to small amounts. Pesto makes
a fabulous pasta salad seasoning. Mix 1 4 cup of pesto sauce with 4 cups of cooked pasta noodles for a
delicious, summery side dish.

The other plants that really own the summer season are berries. Everything from strawberries and
mulberries in early summer, to blueberries, raspberries, and blackberries will be ready to harvest
through the summer season. Get your canning equipment ready and bring on the jam!
