on Th Mahachai.

Brace yourself, but you should be aware that the fried noodles sold from carts along Th Khao San
have nothing to do with the dish known as
pàt tai
. Luckily, less than a five-minute túk-túk (pro-
hachai; mains 25-120B; 5.30pm-1.30am; klorng boat to Tha Phan Fah), home to the most le-
gendary
pàt tai
in Bangkok. As elsewhere, a dish here takes the form of thin rice noodles stir-fried
with dried and/or fresh shrimp, bean sprouts, tofu, egg and seasonings. For something different,
there's Thip Samai's delicate egg-wrapped version, or the
pàt tai
fried with
man gûng
(decadent
shrimp fat).
