'Sydney Seafood School' sessions. Courses start from $85 and run from 11am to 3pm on
weekends and from 6.30pm to 8.30pm about three nights per week.
For a less high-falutin' experience, Bar-Be School ( 1300 227 745; www.bbqschool.com .au;
491 Willoughby Rd, Willoughby) runs a series of three sessions for a hefty $299 (or single ses-
sions for $120), where you mull over the finer points of barbecuing meat, seafood and ve-
ggie skewers, and then eat the results. The three-hour classes are held in various locations
from 11.30am or 3.30pm on Saturday and Sunday.
Drinking & BYO
Most of Sydney's licensed restaurants have a respectable wine list, with an understandable
emphasis on Australian product. There's almost always at least a handful of wines sold by
the glass as well, and better establishments have sommeliers who can help you make the
best possible food and wine match. Restaurant prices are usually about double as much as
you'd pay in a bottle shop (liquor store).
Sydney is blessed with enlightened licensing laws that allow you to BYO (bring your
own) wine and sometimes beer to those restaurants with a BYO licence. You'll usually be
charged a corkage fee (even if your bottle's got a screw cap) at either a per-person or per-
bottle rate, but it's generally cheaper than choosing off the wine list.
