Mon) This family-run trattoria in the centre of Negrar serves heart-warming bowls of broth
and plates of pasta. Highlights include the house soppressa (salami) and the delicious
lasagnetta , made with hand-rolled pasta and a ragù of beef, tomato, porcini and finferli
mushrooms. Downstairs, beside the fire of the old pistoria (bakery), you can sample some
200 Valpolicella labels.

high-powered gastronomy. Arrive early and order fast - or miss out on daily fish specials
or risotto made with Verona's zesty Monte Veronese cheese. Above the restaurant, the own-
ers rent out four lovely rooms (singles/doubles €75/110) that continue the theme of countri-
fied sophistication.

Cariano, where an ancient farmhouse has been converted to a rustically elegant restaurant.
The chef keeps flavours pure - puree of asparagus, risotto with wild herbs, game with
polenta - so as not to compete with 700 Italian wines on the menu.
