century, and it's got so good at it that the restaurant is now crammed with paintings
donated in gratitude by visiting artists. The risotto is made from the humble Gò fish,
which is unique to the lagoon. Full of needle-like bones, they're boiled down to a broth
that is then used to give the risotto its subtle, aromatic flavour.
