Mon-Sat, noon-2.30pm Sun) Young caminieri (waiters) operate meat slicers, slide dexterously
between tables and plonk down plates of raw horse meat, ravioli and veal done all ways
(all of them good) in the inauspiciously named 'golden chicken'. Magazine covers adorn
the walls and the whole place emits the smooth, agreeable energy of a small bistro.

ic interior, laid-back (OK, slow) service and bags of atmosphere and tradition. Like most
Parma restaurants, Gesso doesn't play up to tourists, it just performs naturally for people
who love fantastic simple food.

( 0521 23 36 86; Via Garibaldi 39a; meals from €45; lunch & dinner Wed-Sun) A legend in its
own lunchtime (and dinnertime, come to that), La Greppia is hallowed ground for the kind
of Emilia-Romagna gourmands who know their ragù from their bolognese. Sticking tradi-
tion and modernity in the same blender, it comes up with Parmesan mousse, pear poached
in wine and plenty more surprises. Service is impeccable.
