beamed ceiling and deep drapery give a traditional vibe, the staff here deliver a dining ex-
perience full of new ideas and local flavours. Diners are welcomed with an amuse-bouche
(perhaps a deer and yoghurt mousse) and house-made breads - milk and potato, spelt and
seeded. Mountain pine mugo scents a tagliatelle, while a hazelnut crusted hare is accom-
panied by a dark cocoa sorbet and bitter-sweet roots and leaves. Wines are well chosen
and, of course, local.

feel, with wood beams and a terrace set in a quiet courtyard. The menu is Trentino to the
core, and simple presentation makes the most of good local produce. The wine list is also
