Cuneo, like Alba, is one of Piedmont's curiously under-praised culinary power-
houses, and it has grown more powerful since the opening of the new 4 Ciance, where the
love of local food is evident in every forkful, and the warm, unpretentious staff serve
earthy but poshly presented food at decidedly un-posh prices.
Everything
is homemade, including the bread, and the wine list is superb.

This
1920s-vintage chocolatier invented the
Cuneesi al Rhum
- a large, rum-laced praline
wrapped in cellophane. The chocolates came to the attention of Hemingway, who made a
detour from Milan en route to Nice in 1954 to try them - there's a photograph of his visit
in the window.
