tious trattoria, it has a deserved reputation for superb agnolotti al sugo arrosto (Pied-
montese ravioli in a meat gravy), and gnocchi di patate al gorgonzola. The mains - in-
cluding bollito misto alla piemontese (boiled meat and vegetable stew) - are equally
memorable. Be patient: the food takes a while to arrive, probably because it's 100%
homemade and 100% Piedmontese.

Making a surprise appearance in landlocked Piedmont is fish specialist Il Giglio, where
'sausage' is a swear-word and 90% of the menu comes from the sea. The gregarious,
table-hopping owner breezes around, juggling plates of prawns, calamari and sea bass.

rare that a visitor to Italy can be tempted away from the plump fruits of traditional cook-
ing, but worth an away-day from the trusty trattorias is the stylish modern Kipling, which
keeps 50% of its menu italiano and uses the other half to showcase Indian, Mexican and
Chinese influences.
A bookcase of Lonely Planet guidebooks near the entrance hints at the global ambi-
tions. Juventus soccer players often come here for lunch.

If you're counting Michelin stars or revel in ultra-weird food experiences, you need to
make the trip out to the Castello di Rivoli, where Combal Zero shares digs with the Museo
d'Arte Contemporanea - quite appropriate as it turns out, considering resident chef
Davide Scabin is something of a Jackson Pollock of modern cooking.
His latest creation, cyber-elio Campari , involves inhaling from a helium balloon, tak-
ing a slug of Campari and then biting on a soda-water capsule. Delicious - no? Bookings
are essential.
