The Botzi pear cultivated around Gruyères is deemed precious enough to have its own
AOC. Bite into it as nature intended or try it with local crème de Gruyères , the thickest
cream ever. Cuisses de dame (lady's thighs) are sugary deep-fried thigh-shaped pastries,
found in French-speaking cantons next to amandines (almond tarts). Apart from the ubi-
quitous Apfelstrudel (apple pie), typically served with runny vanilla sauce, German can-
tons cook up Vermicelles, a chestnut-cream creation resembling something like spaghetti.
