ditional cooking in opulent dining rooms. In medieval times it was a guildhall; today it's

century hilltop fortress, with superb views over Stein am Rhein. Tuck into Swiss clas-
sics in the Rittersaal (Hall of Knights). It's a 30-minute uphill walk from the Old Town.
3 APPENZELLER SCHAUKÄSERIE

Stein-based dairy, which runs through the manufacturing process, explaining how
cheeses like the famous Räss get their sweaty-socks smell (a coating of herbs and brine).
From Appenzell, there is a frequent bus service to Stein (Sfr6.80, 12 minutes).
