Formation of Amylose-Lipid Complexes
through Phosphorylase-Catalyzed
Polymerization
During the phosphorylase-catalyzed polymerization of Glc-1-P using
maltohexaose in the presence of lipids, amylose-lipid complexes
were spontaneously formed and precipitated [15]. They were
recovered by centrifugation and lyophilization, and characterized by
X-ray diffraction and differential scanning calorimetry. The presence
of lipids during the amylose synthesis led to lower amylose DP.
