9.10 QUaLItY CONtrOL IN artIFICIaL SWeeteNerS
Artiicial sweeteners are produced with physicochemical or biotechnological methods. Many
sweetenershavebeenmanufacturedfordifferentuseswithahigherorlowersweetnessthanstand-
ardsugar.Saccharincanbedetectedwiththefollowingtests:
1. Salicylicacidtest
2. Resorcinoltest(saccharinpresencecanbedetectedfromthegreenluorescentcolor)
3. Tastetest
4. Phenolsulphuricacidtest.
9.11 GraNULateD SUCrOSe SpeCIFICatIONS
9.11.1 General Speciications
GranulatedsucrosemustmeetthespeciicationsintheUnitedStatesFoodChemicalsCodex(FCC)
and the Joint FAO/WHO Expert Committee on Food Additives (JECFA) standards, including some
speciicrequirementsoftheCoca-ColaCompany(Table9.5).Uponreceipt,itshouldcomplywiththe
following,plusanyotherstandardsdeinedbylocalfoodregulations,consistentwithitsintendeduse.
Granulatedsucrosemustbemanufactured,packaged,stored,andshippedundersanitarycon-
ditionsappropriatetofoodproductsandmustbeincompliancewithallapplicablefoodhygiene,
health,andsanitaryrequirementsandregulationsineffectatthemanufacturingandreceivingloca-
tions. This includes all applicable good manufacturing practices, laws and regulations (national
and local), and all local, national, and international transport regulations as appropriate between
manufacturingandreceivinglocations.
Theuseofchemicalsforcontrollingmicroorganismsisdiscouraged.Theremustbenoresidue
ofanysubstanceusedtocontrolmicroorganismsintheinalproduct.Ifchemicalsareusedforcon-
trollingmicroorganisms,theymustbeidentiiedbynameandusagelevel.
Thesuppliermustperformresidualpesticidetestingonasemiannualbasis.Residualpesticides
mustbedeinedasanyorganicorsyntheticmaterialusedtoprotectcropsfrompests.
9.11.2 Granulated Sucrose Storage Conditions
Topreventsugarfromabsorbingmoistureandtominimizecakingproblems,itshouldbestored
attemperaturesabove10°Candarelativehumiditybelow60%.

9.12.1 purpose
Thissectiondeinesliquidsucrosespeciicationsusedduringproductmanufacturing.
9.12.2 General Speciications
Liquidsugar(sucrose)mustmeetthespeciicationsinTable9.6plusanyotherstandardsdeined
bylocalfoodregulationsconsistentwithitsintendeduse.Itmustbemanufacturedandstoredunder
sanitaryconditionsappropriatetofoodproductsandincompliancewithallapplicablehealthand
sanitaryregulations.
