Grape juice concentrate is sold in liquid form at 56.0 ± 1°Bx in bulk or in aseptic vats of
250 kg.
7.6.7 Manufacture of Grape Juice Concentrate
Innaturalgrapejuiceconcentratefromselectedgrapesmanufacturedundervacuum,juiceis
transparent with a yellow-orange color. The inal product is stabilized, iltered, pasteurized, and
asepticallypackaged(Figures7.8and7.9).Processingguaranteestopproductqualityandauthentic-
ity.Wateradditionbringsittoitsinitialstate.
During the manufacture of grape juice concentrate, grapes are collected clean after washing
andtakentopneumaticpresses,wheretheyarecrushed.Duringcrushing,SO 2 isaddedtoprevent
alcoholicfermentation.Then,grapejuiceisilteredtoremovethegrapesolids,anddefumigationis
carriedout.Filteredgrapejuiceisthenevaporatedat65°Bxundervacuuminthreestagesat90°C,
65°C,and45°Candcooledat10°C(Figure7.10).Juiceisthenilteredagain,pasteurized,andasep-
ticallypackaged.ThemanufactureofgrapejuiceconcentrateisdescribedinFigure7.11.
